I have a lot of oatmeal in my stockpile and I got a wild hair the other day to make cookies. I made oatmeal, craisin, coconut cookies and they were a big hit with the whole family. I took the Quaker Oats Vanishing Cookie recipe and just added craisins and coconut instead of raisins.
Oatmeal, Craisin, and Coconut Cookies
Ingredients
- Brown Sugar, ¾ Cup
- Granulated Sugar, ½ Cup
- Butter, ½ Cup (one stick) softened
- Eggs, 2
- Vanilla, 1 teaspoon
- All-purpose flour – 1½ cups
- Baking Soda, 1 teaspoon
- Ground Cinnamon, 1 teaspoon
- Salt, ½ teaspoon
- Oatmeal, 3 Cups (old-fashioned or quick cook)
- Craisins, 1 Cup
- Coconut, ½ Cup
Instructions
- Preheat oven to 350 degrees F.
- In a large bowl, beat together butter and sugars until creamy. Add vanilla and eggs, mix again.
- In a separate bowl – combine flour, baking soda, cinnamon and salt. Add to large bowl with butter and sugar – blend until mixed.
- Fold in craisins and coconut at the end.
- Scoop full tablespoons of the cookie batter onto ungreased cookie sheets.
- Bake for 9 to 10 minutes or until a light brown. Let them cool. Enjoy.
